How are butter and cheese made? The best way to find out is with a walk to the Burgeralm hut in the Kaiserwinkl region of Tirol. Grazing on the lush meadows around the hut are herds of cows which give the milk needed for dairy products – 45,000 litres of it every summer. This is turned into several different types of cheese, including the famous "Adler Gold" soft cheese. The hut also makes it own dried bacon and sausages. All this homemade produce can be enjoyed on the sunny terrace and also purchased in the farm shop on site. "There's a good chance that after a visit to the Burgeralm hut your rucksack will be heavier going down than it was coming up," smiles author and hut expert Irene Prugger, who is a regular visitor. The hut is also a good place for children to learn about the alpine environment and habitat thanks to its many interactive elements.
