The Mitterer bakery's motto is "no dough without pre-dough". Their focus lies on providing baked goods as in olden days, when taste mattered and baked goods were free of chemical additives. Quality products were more in demand than cheaply produced, tasteless industrially baked products, sometimes with questionable chemical additives. This is achieved by using different types of pre-doughs such as fermented wheat pre-dough, poolish, homemade wheat, spelt and rye natural sourdoughs as well as various bread starters.The Mitterer bakery logo slogan reads: "bread is life".
