Gröstl is a classic Tyrolean dish and is easy to prepare. If you like, you can add some beef - because the dish was originally a leftover from the Sunday roast.
Cut the onion into small cubes and fry in butter in a large pan. Add the bacon and the cooked beef and fry as well.
Cut the potatoes into slices and add to the pan, fry everything well together and season with salt and caraway.
Fry the eggs in butter in a second pan to make fried eggs. Serve the Tiroler Gröstl with the fried eggs and finely chopped chives.
