At the age of 21, Tyrolean Viktoria Fahringer has already achieved a lot: as head chef, she delights guests at the Tiroler Hof in Kufstein, in 2019 she founded her own boutique hotel and has been running it ever since. Today, the youngest hotelier and chef in Tyrol shares one of her most traditional recipes with us: Poppy seed pancakes.

Ingredients

For the filling

  • 60 Gram Poppy seeds
  • 100 Gram Powidl
  • 10 Gram Icing sugar
  • 1 EL Rum

For the dough

  • 90 Gram Flour
  • 3 Piece Egg yolk
  • 1 Pinch Salt
  • 3 Piece Protein
  • 20 gram Sugar

Instructions


Mix the poppy seeds with the powdered sugar, a little vanilla sugar, icing sugar and rum and leave the mixture to infuse. Then shape into small balls.

For the batter, mix the flour, egg yolks and salt until smooth. Beat the egg whites with a mixer until stiff and add the granulated sugar. Then fold the egg whites into the flour and yolk mixture.

Turn the poppy seed balls in the batter and carefully fry in fat. Drain the finished poppy seed balls on kitchen paper, garnish with a little icing sugar and enjoy.
