The chefs from the restaurant in the MOOSER Hotel in St. Anton am Arlberg have given us this recipe for Tyrolean alpine pasta. Have fun cooking it up!
For the Almnudeln, cook the macaroni in salted water until al dente. Finely dice the peeled onion and bacon. Peel the boiled potatoes and cut into slices of the same thickness. Fry the bacon in a pan and add the diced onion. Fry them lightly too and pour in the cream. Bring to the boil once.
Then add the macaroni and potatoes and thicken with the grated cheese. Season to taste with salt, pepper and chives.
For the baked apple puree, boil the water, sugar, cloves and cinnamon stick for approx. 10 minutes. Place the whole apples on a baking tray, pour over the stock and braise in the preheated oven for about an hour until soft. Pass through a sieve. Flavour with lemon juice.
